White Bean and Kale Salad

INGREDIENTS

  • 4 Cups Kale 
  • 1 Can of Cannellini Beans 
  • 1 Avocado 
  • 1/2 C cucumbers, chopped
  • 3 tbsp hemp hearts 
  • 3 tbsp pumpkin seeds
  • dressing: 1 tbsp dijon, 1/4 C olive oil, juice of 1 lemon, 1 tbsp maple syrup, salt and pepper

INSTRUCTIONS

  • Massage 4 Cups Kale with a drizzle of olive oil.
  • Add in a can of drained and rinsed white beans, avocado, cucumbers, hemp hearts, and pumpkin seeds.
  • Mix together 1 tbsp dijon, 1 tbsp maple syrup, 3-4 tbsp olive oil, salt and pepper.
  • Pour over salad and enjoy!
