White Bean and Kale Salad

INGREDIENTS
- 4 Cups Kale
- 1 Can of Cannellini Beans
- 1 Avocado
- 1/2 C cucumbers, chopped
- 3 tbsp hemp hearts
- 3 tbsp pumpkin seeds
- dressing: 1 tbsp dijon, 1/4 C olive oil, juice of 1 lemon, 1 tbsp maple syrup, salt and pepper
INSTRUCTIONS
- Massage 4 Cups Kale with a drizzle of olive oil.
- Add in a can of drained and rinsed white beans, avocado, cucumbers, hemp hearts, and pumpkin seeds.
- Mix together 1 tbsp dijon, 1 tbsp maple syrup, 3-4 tbsp olive oil, salt and pepper.
- Pour over salad and enjoy!
