Taco Burger Bowl

INGREDIENTS

  • ½ lb lean ground beef
  • 1 yellow onion 
  • 1 C white rice 
  • Chopped Tomatoes 
  • Guacamole or avocado 
  • Black beans
  • 1 packet of taco seasoning
  • 1 Sweet Potato 
  • Optional: shredded cheddar cheese

INSTRUCTIONS

  • Cut sweet potato into long pieces (shape of a french fry), drizzle with olive oil, salt, pepper, and a little garlic powder. Roast at 425 for 30 minutes until crispy.
  • Cook rice according to package instructions (swap water for bone broth for a more flavorful and higher protein option)
  • Dice half of your yellow onion and add to a pan over medium heat with olive oil. Let cook for 2 minutes and then add your ground beef. Break the beef up with a wooden spoon and let cook. Once meat is almost cooked, add 2-3 tsp of your taco seasoning.
  • Once everything is cooked, assemble together and enjoy!
