Taco Burger Bowl

INGREDIENTS
- ½ lb lean ground beef
- 1 yellow onion
- 1 C white rice
- Chopped Tomatoes
- Guacamole or avocado
- Black beans
- 1 packet of taco seasoning
- 1 Sweet Potato
- Optional: shredded cheddar cheese
INSTRUCTIONS
- Cut sweet potato into long pieces (shape of a french fry), drizzle with olive oil, salt, pepper, and a little garlic powder. Roast at 425 for 30 minutes until crispy.
- Cook rice according to package instructions (swap water for bone broth for a more flavorful and higher protein option)
- Dice half of your yellow onion and add to a pan over medium heat with olive oil. Let cook for 2 minutes and then add your ground beef. Break the beef up with a wooden spoon and let cook. Once meat is almost cooked, add 2-3 tsp of your taco seasoning.
- Once everything is cooked, assemble together and enjoy!
