Strawberry Shortcake Pancakes

INGREDIENTS
- 1/2 C full-fat greek yogurt
- 1/2 C milk (options: oat/almond/whole milk/coconut milk)
- 1 egg
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 1/2 C oat flour (if you don’t have you can same amount of oats into flour)
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 C chopped strawberries and chocolate chips to mix in
INSTRUCTIONS
- Mix together the greek yogurt, milk, egg, maple syrup, vanilla, oats/oat flour, baking powder, and salt.
- Cut strawberries into little pieces and gently mix into the batter.
- Heat a medium pan on medium heat. Spray with olive oil or coconut oil spray.
- Pour about 2 heaping spoonfuls of batter onto the pan. Wait until the edges start to bubble and flip.
- Repeat with all of the batter and serve!
