Strawberry Shortcake Pancakes

INGREDIENTS

  • 1/2 C full-fat greek yogurt
  • 1/2 C milk (options: oat/almond/whole milk/coconut milk)
  • 1 egg
  • 1 tbsp maple syrup 
  • 1 tsp vanilla extract
  • 1 1/2 C oat flour (if you don’t have you can same amount of oats into flour)
  • 1 tsp baking soda 
  • 1/4 tsp salt 
  • 1/2 C chopped strawberries and chocolate chips to mix in

INSTRUCTIONS

  • Mix together the greek yogurt, milk, egg, maple syrup, vanilla, oats/oat flour, baking powder, and salt. 
  • Cut strawberries into little pieces and gently mix into the batter.
  • Heat a medium pan on medium heat. Spray with olive oil or coconut oil spray.
  • Pour about 2 heaping spoonfuls of batter onto the pan. Wait until the edges start to bubble and flip. 
  • Repeat with all of the batter and serve!
