INGREDIENTS
- 6 oz salmon
- ½ avocado
- ½ C chopped cucumber
- ⅓ C edamame
- ½ C white rice
- Coconut aminos or soy sauce
INSTRUCTIONS
- Cook rice according to package instructions.
- Cut your salmon into cubes about ½-1 inch thick. Coat in aout ½ tbsp of olive oil and a dash of salt, pepper, garlic powder, cumin and paprika.
- Place on a baking sheet and cook at 400 for 8-10 minutes until salmon is cooked though.
- Chop up your avocado and cucumber and then assemble.
- Add rice, salmon, edamame, cucumber, and avocado to a bowl. Top with soy sauce or coconut aminos and enjoy!
