Simple Salmon Bowl

INGREDIENTS

  • 6 oz salmon 
  • ½ avocado 
  • ½ C chopped cucumber
  • ⅓ C edamame 
  • ½ C white rice 
  • Coconut aminos or soy sauce

INSTRUCTIONS

  • Cook rice according to package instructions.
  • Cut your salmon into cubes about ½-1 inch thick. Coat in aout ½ tbsp of olive oil and a dash of salt, pepper, garlic powder, cumin and paprika. 
  • Place on a baking sheet and cook at 400 for 8-10 minutes until salmon is cooked though. 
  • Chop up your avocado and cucumber and then assemble.
  • Add rice, salmon, edamame, cucumber, and avocado to a bowl. Top with soy sauce or coconut aminos and enjoy!
