Sesame Soy Tofu, Eggplant & Broccoli

INGREDIENTS

  • 1 Head Broccoli 
  • 1 package Tofu, drained 
  • 3 tbsp soy sauce 
  • Garlic powder
  • Black pepper 
  • 2 tbsp tahini 
  • 2 tbsp maple syrup 
  • 1 tbsp sriracha 

INSTRUCTIONS

  • Cut and drain the tofu. Press extra liquid out. Chop up your eggplant
  • On a large baking sheet  place your tofu on one half (make sure the pieces aren’t touching) and then on the other half put the eggplant. Bake at 400 for 20 minutes.
  • While in the oven mix together the soy sauce, garlic powder, black pepper, tahini, maple syrup and sriracha.
  • On the stove top, steam the broccoli for 5-7 minutes until bright green. Set aside.
  • After 20 minutes, take out the tofu and eggplant. Mix the broccoli, tofu, eggplant with the sauce with the sauce and serve and enjoy!
