Sesame Soy Tofu, Eggplant & Broccoli

INGREDIENTS
- 1 Head Broccoli
- 1 package Tofu, drained
- 3 tbsp soy sauce
- Garlic powder
- Black pepper
- 2 tbsp tahini
- 2 tbsp maple syrup
- 1 tbsp sriracha
INSTRUCTIONS
- Cut and drain the tofu. Press extra liquid out. Chop up your eggplant
- On a large baking sheet place your tofu on one half (make sure the pieces aren’t touching) and then on the other half put the eggplant. Bake at 400 for 20 minutes.
- While in the oven mix together the soy sauce, garlic powder, black pepper, tahini, maple syrup and sriracha.
- On the stove top, steam the broccoli for 5-7 minutes until bright green. Set aside.
- After 20 minutes, take out the tofu and eggplant. Mix the broccoli, tofu, eggplant with the sauce with the sauce and serve and enjoy!
