Roasted Chicken with Artichokes, Olives, and Dates with Orzo

INGREDIENTS

  • 1 lb chicken thighs 
  • 1/4 C chopped dates
  • 1/2 C chopped olives 
  • 2 cans artichoke hearts
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil 
  • 2 tsp garlic powder
  • Salt and pepper 
  • 1 C orzo cooked

INSTRUCTIONS

  • Place everything on a pan, coat in olive oil, red wine vinegar, salt, pepper and garlic powder.
  • Cook at 400 for 30 minutes.
  • While that is cooking, make your orzo (you can also do any grain like rice or pasta) according to the package.
  • Serve all together and enjoy!
