Spicy Protein Pasta

INGREDIENTS

  • Lentil pasta 
  • Cooked eggplant
  • Kale 
  • Parsley 
  • Tomato sauce 
  • Red chili flakes 
  • Mozzarella 

INSTRUCTIONS

  1. Cook the pasta according to package instructions.
  2. Drain the pasta and then add it back into the pan with your eggplant, kale and tomato sauce. Mix together until the kale wilts 
  3. Top with red chili flakes and cheese and enjoy!
