Plant-Based Summer Rolls

INGREDIENTS

  • Rice Paper Wrapper/Spring Roll Wrapper 
  • Cucumber
  • Carrot
  • Mint
  • Vermicelli Noodles (cooked to package instructions)
  • Avocado 
  • Optional: Protein of choice (tofu, chicken, shrimp, salmon)

INSTRUCTIONS

  • Prepare your fillings by chopping your cucumbers and carrots into stick-like shapes, slicing your avocado, cooking your noodles and preparing your protein.
  • Dip your rice paper in warm water for 5-10 seconds then place it on a clean surface. 
  • Add your fillings, wrap, and enjoy!!
  • Serve with a homemade peanut sauce!
