Simplified Picadillo

INGREDIENTS

  • 1 lb Ground Beef
  • 1 Chopped Bell Pepper
  • 1 Yellow Onion Chopped 
  • 3 cloves garlic (minced)
  • Fajita or taco seasoning
  • 2 tbsp tomato paste 
  • Optional: ¼ C white wine, ¼ C chopped green olives, ¼ C raisins
  • To serve: white rice, cheese, salsa, cilantro, greens 

INSTRUCTIONS

  • Heat olive oil in a skillet. 
  • Add chopped bell pepper, chopped onion, garlic, and seasoning. Cook for about 6 min until onions are translucent. 
  • Add the tomato paste and stir to combine. Turn up the heat to high and add in your beef. Cook until meat is fully cooked and browned.
  • Once meat is cook add in your optional additions:  ¼ C white wine, ¼ C chopped green olives, ¼ C raisins
  • Serve over rice (cilantro lime rice is the best!), top with some greens, cheese, salsa etc
