INGREDIENTS
- 1 lb Ground Beef
- 1 Chopped Bell Pepper
- 1 Yellow Onion Chopped
- 3 cloves garlic (minced)
- Fajita or taco seasoning
- 2 tbsp tomato paste
- Optional: ¼ C white wine, ¼ C chopped green olives, ¼ C raisins
- To serve: white rice, cheese, salsa, cilantro, greens
INSTRUCTIONS
- Heat olive oil in a skillet.
- Add chopped bell pepper, chopped onion, garlic, and seasoning. Cook for about 6 min until onions are translucent.
- Add the tomato paste and stir to combine. Turn up the heat to high and add in your beef. Cook until meat is fully cooked and browned.
- Once meat is cook add in your optional additions: ¼ C white wine, ¼ C chopped green olives, ¼ C raisins
- Serve over rice (cilantro lime rice is the best!), top with some greens, cheese, salsa etc
