Maple-Dijon Chicken and Veggies

INGREDIENTS

  • 8 large carrots
  • 2 small sweet potatoes 
  • 3 tbsp maple syrup
  • 3 tbsp dijon mustard 
  • 3 tbsp olive oil 
  • Pinch of salt and pepper 
  • 2 tsp garlic powder
  • 3 Chicken thighs 

INSTRUCTIONS

  • Chop up your carrots and sweet potato into similar sized chunks.
  • Turn on your oven to 400.
  • Mix together the dijon, maple syrup, olive oil, salt and pepper and garlic powder.
  • Place the vegetables on a non-stick baking sheet or  a baking sheet lined with parchment paper. Place the chicken thighs in the middle of the dish. Coat the entire thing in your sauce. Cook at 400 for 35-40 minutes.
