Maple-Dijon Chicken and Veggies

INGREDIENTS
- 8 large carrots
- 2 small sweet potatoes
- 3 tbsp maple syrup
- 3 tbsp dijon mustard
- 3 tbsp olive oil
- Pinch of salt and pepper
- 2 tsp garlic powder
- 3 Chicken thighs
INSTRUCTIONS
- Chop up your carrots and sweet potato into similar sized chunks.
- Turn on your oven to 400.
- Mix together the dijon, maple syrup, olive oil, salt and pepper and garlic powder.
- Place the vegetables on a non-stick baking sheet or a baking sheet lined with parchment paper. Place the chicken thighs in the middle of the dish. Coat the entire thing in your sauce. Cook at 400 for 35-40 minutes.
