Lazy Girl Fried Rice

For nights when you have no energy to cook, when you aren’t in the mood for anything, for when you want something comforting but also healthy, for when you need a balanced meal in a pinch… this is the meal for you. It’s completely customizable based on what you have in your fridge (or pantry) and is satisfying and delicious. (Increase portions for more servings!) Some other great add-ins are chickpeas, frozen or cooked cauliflower, and broccoli!

INGREDIENTS

  • ¼ C Rice (leftover or frozen work!)
  • 2 eggs 
  • Spinach
  • Zucchini
  • Soy sauce or coconut aminos 
  • Garlic powder, salt, pepper

INSTRUCTIONS

  • Cook rice according to package instructions (or use leftover or frozen rice)
  • In a large pan over medium heat add your zucchini (or other veggies) with a little olive oil, salt, pepper, and garlic powder. Cook for about 5 minutes. Add your rice and spinach. Mix all together.
  • Make a space in the middle of the pan and crack 2 eggs. Scramble the eggs. Once eggs are almost cooked, mix everything on the pan together. 
  • Add a tbsp of soy sauce or coconut aminos and enjoy!
