Hidden High-Protein Waffles

Yields ~4 Waffles

INGREDIENTS

  • ⅓ C cottage cheese
  • 1 large egg 
  • ½ tsp vanilla extract
  • ½ C oat flour
  • ½ tbsp sugar or maple syrup
  • ¼ tsp baking powder
  • Maple syrup (for topping)

INSTRUCTIONS

  • Mix all ingredients together in a blender (to help smooth out the curds from the cottage cheese)
  • Spray your waffle iron and cook until golden brown
  • Enjoy with syrup, fruit, or chocolate!
