Hidden High-Protein Waffles

Yields ~4 Waffles
INGREDIENTS
- ⅓ C cottage cheese
- 1 large egg
- ½ tsp vanilla extract
- ½ C oat flour
- ½ tbsp sugar or maple syrup
- ¼ tsp baking powder
- Maple syrup (for topping)
INSTRUCTIONS
- Mix all ingredients together in a blender (to help smooth out the curds from the cottage cheese)
- Spray your waffle iron and cook until golden brown
- Enjoy with syrup, fruit, or chocolate!
