Green Curry

INGREDIENTS

  • 1 Sweet Potato 
  • 1 C broccoli
  • 1/2 C Large chopped carrots
  • 1/2 C Snow peas 
  • 1 can Unsweetened Coconut Milk
  • 3-4 tbsp Green Curry Paste
  • 1 tbsp avocado oil (or any oil)
  • 2 tbsp lime juice

INSTRUCTIONS

  • Chop all of your vegetables and coat in 1 tbsp oil. Add to a large skillet and cook for about 10 minutes (cover for 3-5 minutes with 2 tbsp of water and then uncover for the remaining 5 minutes) until cooked all the way through. 
  • In a separate pan add the coconut milk and green curry paste and lime juice. Stir until fully combined. Add in the vegetables and enjoy!
  • If you want to add tofu  some text
    • If you want to add tofu cut up the tofu and add to the skillet to cook with the vegetable sand then transfer to the curry sauce with the vegetables
  • If you want to add chicken some text
    • If you want to add chicken. Get chicken thighs and chop into bite sized pieces. Before cooking the vegetables add the chicken to a pan for ~8-10 minutes or until cooked through. Add the raw vegetables and cook according to instructions above. Follow the rest of the directions above.
