30 Minute Sheet Pan Hormone Healthy dinner

INGREDIENTS

  • 2 Vegetables (eggplant/zucchini/peppers/onion/broccoli/cauliflower)
  • 1 or 2 sweet potatoes 
  • Rotisserie Chicken or Firm Tofu

INSTRUCTIONS

  • Turn on your oven to 400.
  • Chop up the vegetables and sweet potato into similar sized pieces.
  • Chop the sweet potato into cubes. 
  • Place on a baking sheet.
  • (For Tofu) Press and drain your tofu. Chop into cubes and add to the baking sheet. 
  • (For Rotisserie Chicken) Chop up the chicken and set aside.
  • Coat vegetables in 1-2 tbsp of olive oil, salt, pepper, and garlic powder (about 2 tsp of each).
  • Cook at 400  for 30-35 minutes. 
  • Serve and enjoy!
