30 Minute Sheet Pan Hormone Healthy dinner

INGREDIENTS
- 2 Vegetables (eggplant/zucchini/peppers/onion/broccoli/cauliflower)
- 1 or 2 sweet potatoes
- Rotisserie Chicken or Firm Tofu
INSTRUCTIONS
- Turn on your oven to 400.
- Chop up the vegetables and sweet potato into similar sized pieces.
- Chop the sweet potato into cubes.
- Place on a baking sheet.
- (For Tofu) Press and drain your tofu. Chop into cubes and add to the baking sheet.
- (For Rotisserie Chicken) Chop up the chicken and set aside.
- Coat vegetables in 1-2 tbsp of olive oil, salt, pepper, and garlic powder (about 2 tsp of each).
- Cook at 400 for 30-35 minutes.
- Serve and enjoy!
