10-Minute Thai Style Salad

INGREDIENTS

  • 1 bag coleslaw mix
  • 1 cucumber sliced 
  • 1 bell pepper sliced 
  • Cilantro, mint, and green onion 
  • 1 bag frozen brown rice (or fresh)
  • Dressing: 2 tbsp coconut sugar mixed with 1/4 C water. Add in 1 tsp minced garlic. Juice from 2 limes, 3 tbsp fish sauce
  • Optional: Serve with avocado, rotisserie chicken, or tofu!

INSTRUCTIONS

  1. Slice cucumber and  red bell pepper into small slices. 
  2. Mix all together with the bag of coleslaw mix.
  3. Chop up your green onion. Add into the bowl.
  4. Add in your herbs.
  5. Microwave your frozen brown rice according to package directions (or use fresh rice!)
  6. For the dressing. Mix together 2 tbsp coconut sugar with ¼ C water until diluted. Add the rest of the ingredients. 
  7. Pour on top of the salad and enjoy!
